I think this problem is very difficult to cure if not impossible to cure.

Once the gill sunken, the damage already done. Not sure if any remedy, even have, the improvement won't be significant. Just keep them and take good care of them. It would be great if you could mention your discus keeping routine, such as WC and food?

sometimes, if the sunken gill is not so severe, after the fish grow bigger, it will look "normal" i.e. a bit thicker but at least not concave. One remedy you can try is to feed the fish with calcium in your bh, and very very clean water. Be sure also that your fish is not breathing very fast.

My experience is that I do face this problem in my early days of discus keeping. However, I have overcome this by increasing the airation of pump in the tank. This method will increase O2 level in the water. This is also because when they are at juv stage, we feed many times a day and resulting water are dirty and O2 level come down to a level so low that all the juv breathing increase due to leak of O2 in water. This can be the cause of damage to the gill and gill cover at this early stage of these juv. Another way, of doing this is if your fishes are fed heavily, change water at least twice a day (100%). This will help with fresh O2 level in water and fishes growth is better. The other way is over flow by dripping method. This will also helps. But not many can allow drip or water change 2-3 times a day. So I decided increasing the airation as this is the best and better way to let the juv. have a healthy gill with enough O2. However, this have helps me to reduce the sunken gill with my juv. But another factor is all fishes must have enough mineral in the water or added in the food. All these link.

Hope this helps and it is just my opinion.

All my juv are fed 5-6 times a day and have to make sure the fishes finished all food in 5 minutes time. On average daily 2 times depending on the condition and situation. At times, 3 times. My fishes are taken care by my wife and maid.

Nice to see your wife is into this discus keeping hobby too. So from what you are doing i can conclude that clean water is the key to proper gill plate developement.
